Paneer Franky & Corriander Chutney

My family is a big fan of Paneer (Indian Cottage Cheese ), we just love paneer in any form be it palak paneer or masala paneer or fried Paneer ( paneer pakoda ).. its just very tasty and yummmy I think. So this time I tried another snack made out of paneer.I normally buy the frozen paneer from Indian store but back home in India you get fresh paneer or some do make paneer @home.Below is link if you want to make it @ home.

To all the Paneer Lovers enjoy Paneer Franky. Very simple and easy snack that you can enjoy any time.

what do you need to make it:

1 cup Paneer

1/2 Onion

1/2 Green Pepper

1 Tomato

1 teaspoon Chaat Masala

1/2 tea spoon Red Chilli

1/4 tea spoon Turmeric powder

Tortilla

Mint/ Corrainder Chutney (recipe below or can get store bought)

Lets make it :

  • Nicely dice 1/2onion, 1 tomato, 1/2green pepper into small pieces
  • Take pan and add 1/2 table spoon of oil. Let the oiil come to heat and then add onions.Sautee' the onion until they turn brown and then add tomatoes.
  • Add some chilli powder,turmeric powder,chaat masala to the mix.Add green pepper on top of it.
  • Crumble 1 cup of paneer and add it to the pan. Mix it for some more time , cool it for 5 -10 mins and add some salt as per the taste.

Lets Wrap it up:

  • You can get store bought tortilla , I prefer getting wheat one as wheat is healthy and less fatty :). if you cant get store bought tortilla you can make it @ home here s a link ,http://www.wonderhowto.com/how-to/video/how-to-make-flour-tortillas-146993/
  • Heat a flat pan , apply some butter on both the sides of the tortilla,if you dont apply butter the tortilla can go hard.
  • Once the pan is hot put tortilla into the pan , apply some mint or corriander chutney on top tortilla and then fill it up with paneer masala that we made before.
  • Round the tortilla like a dosa or a burritto, once tortilla is nice and brown serve it on a plate cut into pieces and have it with sauce :).....

Some Tips:

You can always make tortilla before hand and store in fridge , it remains good for a long time if properlly cooked.

Different color of peppers like red, yellow peppers into the mix too.

Corrainder Chutney/Min chutney:

1 bunch of corrainder leaves

4-5 leaves of mint

1/2 green chilli

grated coconut

1 table spoon of yogurt

lemon juice and sugar, salt as per the taste

Get a grinder ,add everything into and mix it . Dont add water all at once otherwise it will be too watery...add water as u neeed. Try this chutney you will love it , you can hav eit with dosa, idli and even apply on bread and have sandwich.

Green Coin

I always like to try something new when I have free time or on special occassions like hubby's bday. He is so sweet he is always my guinea pig and critic on how the dish turn out to be . For his bday I tried this new snack called "Green Coin" and believe me it was a really tasty . My sister was asking me the recipe and I promised her the next blog would be the Green Coin. So this one I give it to my sister ..try it on Jiju and let me know how it turns out to be.

Green Coin:

Ingredients :

Green Peas(1/2 cup),
fresh Corrainder(1/4 cup),
Mint leaves(10-12 leaves),
Spinach(4-5 leaves),
green chilli(2-3 , as per your spice level),
garlic gloves (5-6),
Ginger 1teaspn,
Garam masala,
Gram Flour (Besan),
Bread slices,
All purpose flour,
Sesame seeds.

Lets Make Green Paste:



  • Mix Green Peas(1/2 cup),fresh Corrainder(1/4 cup),Mint leaves(10-12 leaves),Spinach(4-5 leaves),green chilli(2-3 , as per your spice level),garlic gloves (5-6),Ginger 1teaspn in a grinder and make a thick paste out of it.

  • Add some lemon juice (1/2 lemon), sugar, salt in this paste

  • Take 1 table spoon of oil in a non stick pan . Once the oil gets hot add green paste in .

  • Stir the mixture for some time (5-10 mins) and then add 1/2 teaspoon of garam masala in it along with 1/4 cup of Gram Flour.

  • Stir the mixture again for some more time( another 10 -15 mins) until it gets dry.

Real Part of getting whole thing together,



  • So take 1 slice of bread . Get some kind of round mold and cut round pieces of bread. I had taken the top of one of my plastic Bottle :).

  • Apply the Green paste on the top of round bread .

  • All purpose paste : Take some all purpose flour and add some water and make a paste out of it , not too thick or liquid.

  • Apply this all purpose paste on top of the paste (which is already been applied on the bread). This paste will hold it all together otherwise the green paste can fall apart.

  • Apply some sesame seed all over on the top.

  • Prepare all Green coins together .

Cooking:



  • There are various ways to cook it now. For my first time I actually fried them in oil . But in oil it eats tooo much oil because of the bread . But if you are ok with oil you can fry it and have it with ketchup sauce.

  • Second way , you can take a flat pan add some oild on the pan . Start with 4-5 Green Coins and cook it back and forth . This way u will have less oil but the bread will still become brown and cripy which is Yummmmmy :).

  • You can try baking it too just keep everything in 350F pre-heated oven .

How about some Chatpate Chole - Chick Peas Curry

Hey,

I am back with some quick recipe for Chatpate chole or Chick Peas curry . I know sometimes its pain to cut dice onions and tomatoes and takes 30 mins just to cook one curry . So here is a simple recipe I follow and believe me you will love it too how simple it has become to cook Chole :).


Simple and Fast Recipe:

Ingredients:
1 Can of Chik Peas,
Red Chilli,
Turmeric powder,
Everest Chole Masala,
lemon,
Hunts Tomato paste,
onion,
tomato,
Kasturi Methi,
garlic paste,
Olive Oil/Vegetable Oil



Curry Paste:

  • Take 1/3 onion ( again I prefer red onion it brings nice taste to the curry paste) and 1/2 fresh tomato . Cut them in to big chunks .
  • Take a microwave bowl , add cut onions, tomato, garlic paste , add some water ( Water should enough to boil it , I normally add so much that it try to cover my onion and tomato some what) and put it in microwave for 4 mins.
  • Add the boiled onions and tomatoes remove the water from the bowl before you add it to the grinder and add 1 table spoon of hunt tomato paste. You know I have Magic bullet it works great on these kind of grinding , small to handle and not too much effort to clean.
  • Hunt tomato paste is kind of thick so is good and gives good color too. if you dont have paste instead of 1/2 tomato take 1.5 red tomatoes.
Cooking Chole:

  • To Cook Healthy I have started using Olive oil instead of our vegetable oil.

  • So Take 1 spoon (2 teaspof olive oil in a pan , once pan come to heat add the grinded paste in to it. You will see sauce boiling as soon as u add it. Add some Milk to it , if you add water then it will start losen up some water when the curry is ready , you dont want that.........

  • Open 1 can of Chole ( enough for 2-3 people) clean it under water and then add to curry paste.

  • Add 1/2 teaspoon of red chilli, turmeric powder, 1 Tablespoon of Chole masala, 2 teaspoon of lemon,1/2 tablesppon of kasturi methi . You can add all the spices as per your taste if you want spicy add more red cilli powder and chole masala. Do not add too much turmeric powder it does not have any taste its just for some color.

  • Add Kasturi methi it gives a nice smell and flavor to chole curry. You can also add a pinch of "Hing" powder to it so that u dont have gas later on in your stomach ;).

  • Add salt , keep it to boil for some time.
Another Useful tip : If you want darker color to Chole you can try adding Tamarind paste to it instead of lemon juice.

if you have Anardana powder you can even add that to Chole.

Puff Patties

Hi Friends,

Today's recipe of the day is Puff Patties. This recipe is devoted to my dearest friend Rohini, she is the one who actually inspired me to start this blog. So Roh here u go for Puff Patties recipe.
Puff Patties:



Ingredients: Potato, Pastry Sheet,chaat masala,red chilli powder,lemon,ginger paste,garam masala,egg wash ( beat the egg )

Patties Masala:

  • Boil the potato depending how many you want to make. Normally I would take 1 potato good enough to make 5 puff patties.
  • Peel potato and crush it in a plate.
  • Add red cilli powder (as per your taste buds , spicy or mild ), 1 teaspoon of lemon juice ,garam masala ,ginger paste,chaat masala,salt (as per the taste) to it. Instead of all this you can also try adding on Pav bhaji masala ,lemon,and salt to it.
You can even make the masala with crushed Paneer.

For the Puff :



  • For the puff you can find that in frozen section in grocery store. I normally get Pepperidge farm Puff pastry sheets . They have 2 sheets which can make around 18 Puff patties.
  • Thaw the puff pastry for 20 mins, you dont want to thaw it longer then it becomes sticky and very hard to unfold it ( from my personal experience ;))
    After 20 mins you can unfold it and then keep it for some more time to come up to room temperature.
  • If you lose your patience you can keep it in microwave for 5 seconds ( not more than that ) .Once @ room temperature you want to get one long pastry sheet and cut it in 3 pieces.
  • Fill puff masala (potato masala) in 1 rectangular piece of the pastry.
    Apply some egg wash ( if you dont eat egg you can always apply all purpose( Maida) paste )at the corner of the rectangular sheet. Fold upper right corner diagonally to meet lower left corner and crease edge.
    Apply egg wash @ the top . ( this is optional if you apply this it becomes more flaky and cripy)
  • Make all the required puff patties
Cooking:
  • Preheat the over for 400F.
  • Take an aluminum sheet and place all your puff patties on top of it and keep it in oven for 15-20 mins.
  • After 15 -20 mins it will turn nice golden brown .......you want to cool it for some time so that you dont burn your mouth..
  • All ready and set you can have it with Ketchup or hot sauce.

This is a good snack in parties or just have in evening and very easy to make .Hope you all enjoy this dish.

Bread Pizza

I love cooking, eating different cuisines. I love going to gym so always feel that should eat healthy @ the same time.
So in these blogs of mine I would like to share some recipes which are simple, tasty and easy to make and healthy . I know in everyday routine its very hard to find time to cook different kind of food or even cook .. believe me I work @ Intel corp and @ times I come home @ 8pm @ night..but when u are back home u want to eat something tasty and if thats healthy too then its awesome..
I love friends coming over to my place , on friday nights normally my friends would come over and we will either cook together / I will cook and watch some Hindi movie.. This friday we watched Delhi 6 it was borrrrrrrring I dont know how Abhishek Bachchan signed up for that movie .. anyways this is about food that day we made home made bread pizzza yummmy :).

Bread Pizza Recipe:

Ingredients: Bread,spagetti sauce,cheese,fresh vegetables,salt,red pepper flakes.
  • First and foremost you should have Bread available. I like to buy Wheat Breat since its healthy, if you dont like wheat you can buy Sara Lee's white (whole grain bread).
  • You can cut all kind of vegetables that you would love to see on a normal Pizza. I had green pepper, red onion ( I prefer red rather then white onion), olives, already cut store bought artickhokes would be good too.
  • Nicely diced onions small pieces, medium cut sized green pepper , store bought small cut canned olives.
  • My friend had got smoked pepperoni (75% less fat) already cut in round pieces.
  • Store bought Spagetti sauce , I had tomato and basil mix. You can get Tomato garlic, mushroom green pepper and so on. Just remember the sauce should be little thick. I had was Francesco Rinaldi (Tomato and basil)http://www.francescorinaldi.com/shop/product.asp?i=1#
  • Take 1 bread slice , nicely spread the tomato basil sauce , put 1Tbsp nice italian cheese ( stored bought shredded cheese , I get low skim milk cheese) , all your topping on the top.
  • if you have OTG you can already preheat it @ 400F and put them 1 by 1 as u make it .
  • if you dont have OTG but oven , then u can make it all @ once and keep it in preheated oven for 10 mins.
  • Once cheese starts melting and bread is brown @ the bottom , remove it .Sprinle some salt and red pepper flakes Wallla its ready to eat :).
